My Philosophy
A Vegetarian, Local, and Committed Cuisine
Fruits, vegetables, plants, fermented drinks… Everything is designed to nourish both body and soul. The cuisine is vegetarian (flexitarian), creative, sustainable, and always full of flavor.
Here, we rediscover the foundations of food: sourdough bread, yogurts, plant-based cheeses, miso, kefir, pickles, kombucha, and desserts made with natural ferments…
The ingredients are organic, locally sourced, and often harvested or delivered directly by the producers themselves.
